Description

A creamy and zesty pasta dish combining ricotta cheese and fresh lemon for a delightful flavor experience.


Ingredients

  • 8 ounces pasta (spaghetti, fettuccine, or penne)
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 lemon, zested and juiced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh basil, chopped
  • 1/4 cup pasta water

Instructions

  1. Boil the pasta by bringing a large pot of salted water to a boil and cooking according to package instructions until al dente.
  2. Sauté the garlic in olive oil in a skillet over medium heat for about a minute until fragrant.
  3. Create the sauce by lowering the heat and combining ricotta cheese and Parmesan cheese until smooth and creamy.
  4. Add lemon zest and juice, stirring to incorporate into the sauce.
  5. Season the sauce with salt and black pepper.
  6. Reserve 1/4 cup of pasta water before draining the pasta.
  7. Combine the drained pasta with the ricotta mixture, tossing gently to coat.
  8. Adjust the sauce’s consistency with reserved pasta water as needed.
  9. Finish by tossing in the chopped basil before serving.
  10. Serve immediately, garnished with extra basil if desired.

Notes

Make the sauce ahead of time and reheat before adding to the pasta. Customize with additional ingredients like grilled chicken or vegetables for variety.
