Description

A vibrant dish featuring roasted potatoes, seasoned ground beef or black beans, topped with cheese, salsa, and fresh vegetables for a hearty, comforting meal.


Ingredients

  • 4 medium russet potatoes, diced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp ground cumin
  • Salt & pepper to taste
  • 1 lb ground beef or black beans
  • 1 packet taco seasoning
  • 1 cup shredded cheddar or Mexican blend cheese
  • ½ cup sour cream or Greek yogurt
  • ½ cup salsa
  • ¼ cup sliced green onions
  • ¼ cup chopped cilantro

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss the diced potatoes with olive oil, chili powder, smoked paprika, garlic powder, cumin, salt, and pepper until coated.
  3. Spread the seasoned potatoes evenly onto a baking sheet.
  4. Roast them in the oven for 25–30 minutes, flipping halfway through.
  5. Heat a skillet over medium heat, and brown your ground beef (or black beans).
  6. Sprinkle in the taco seasoning and add a splash of water. Let it simmer for about 5 minutes.
  7. Remove the potatoes from the oven and transfer them to serving bowls.
  8. Top with cheese to let it melt, then add your seasoned meat or beans.
  9. Add toppings like salsa, sour cream, green onions, and cilantro.

Notes

You can prep the potatoes a day in advance. Swap ingredients for variety, like using Pepper Jack cheese for spice or making it vegan.
