- 4 medium russet potatoes, diced
- 2 tbsp olive oil
- 1 tsp chili powder
- 1 tsp smoked paprika
- 1 tsp garlic powder
- ½ tsp ground cumin
- Salt & pepper to taste
- 1 lb ground beef or black beans
- 1 packet taco seasoning
- 1 cup shredded cheddar or Mexican blend cheese
- ½ cup sour cream or Greek yogurt
- ½ cup salsa
- ¼ cup sliced green onions
- ¼ cup chopped cilantro
Instructions
- Preheat your oven to 425°F (220°C).
- Toss the diced potatoes with olive oil, chili powder, smoked paprika, garlic powder, cumin, salt, and pepper until coated.
- Spread the seasoned potatoes evenly onto a baking sheet.
- Roast them in the oven for 25–30 minutes, flipping halfway through.
- Heat a skillet over medium heat, and brown your ground beef (or black beans).
- Sprinkle in the taco seasoning and add a splash of water. Let it simmer for about 5 minutes.
- Remove the potatoes from the oven and transfer them to serving bowls.
- Top with cheese to let it melt, then add your seasoned meat or beans.
- Add toppings like salsa, sour cream, green onions, and cilantro.
Notes
You can prep the potatoes a day in advance. Swap ingredients for variety, like using Pepper Jack cheese for spice or making it vegan.
