- 250g mascarpone cheese
- 200ml heavy cream
- 100g sugar
- 1 cup brewed coffee, cooled
- 200g Lotus Biscoff cookies
- 2 tablespoons cocoa powder
- 1 teaspoon vanilla extract
Instructions
- In a mixing bowl, whisk together the mascarpone cheese, heavy cream, sugar, and vanilla extract until smooth and creamy.
- Dip each Lotus Biscoff cookie into the brewed coffee for a few seconds, ensuring they are soaked but not soggy.
- Layer the soaked cookies in the bottom of a serving dish.
- Spread half of the mascarpone mixture over the cookies.
- Add another layer of soaked cookies on top of the mascarpone mixture.
- Spread the remaining mascarpone mixture over the second layer of cookies.
- Refrigerate for at least 4 hours or overnight to set.
- Before serving, dust the top with cocoa powder.
Notes
- For a stronger coffee flavor, use espresso instead of brewed coffee.
- Feel free to add chocolate shavings on top for extra decoration.
- This dessert can be made a day in advance for better flavor.
