Description

A delightful dish of creamy chickpeas in velvety coconut milk, infused with earthy spices and garnished with fresh cilantro.


Ingredients

  • 1 can of chickpeas (15 oz)
  • 1 cup of coconut milk
  • 2 tablespoons of olive oil
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 teaspoon of cumin
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in minced garlic and cook for another minute.
  4. Add chickpeas, coconut milk, cumin, paprika, salt, and pepper. Stir well.
  5. Simmer for 10-15 minutes until the mixture thickens.
  6. Garnish with fresh cilantro before serving.

Notes

This dish can be made a day in advance and reheated. Consider adding spinach or kale for extra nutrition.
