- 3 tablespoons olive oil
- 1 medium onion, diced
- 1 tablespoon garlic, minced
- 1 cup baby spinach, chopped
- 1 lb. ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup Greek yogurt
- 2 tablespoons fresh dill, finely chopped
- 1 tablespoon fresh lemon juice
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
Instructions
- Heat one tablespoon of olive oil in a non-stick skillet over medium heat. Sauté diced onions until translucent, about 5 minutes. Add minced garlic and sauté for an additional 30 seconds.
- In a large bowl, combine sautéed onions and garlic with chopped spinach, ground chicken, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper. Mix well.
- Shape the mixture into approximately eight patties, each about ½ inch thick.
- In the same skillet, add remaining olive oil over medium heat. Cook the patties for 5-6 minutes on each side until golden-brown and cooked through.
- Place cooked patties on paper towels to drain excess oil and serve warm.
Notes
These patties can be prepared a day in advance. Serve with tzatziki, hummus, or in pita bread for added flavor.
