Description

A delightful dish featuring flaky salmon fillets and zesty lemon-infused rice, capturing the vibrant flavors of the Mediterranean.


Ingredients

  • 4 salmon fillets
  • 1 cup rice (long-grain or basmati)
  • 2 cups vegetable broth
  • 1 lemon (zested and juiced)
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Heat the olive oil in a saucepan over medium heat and sauté the minced garlic until fragrant, about 30 seconds.
  3. Add the rice to the pan, stirring for 1-2 minutes to toast it lightly.
  4. Pour in the vegetable broth, lemon juice, and zest. Bring to a boil, then reduce heat, cover, and let it simmer for 15-20 minutes.
  5. Season the salmon fillets with oregano, salt, and pepper.
  6. Place the seasoned salmon on a baking sheet and bake for 12-15 minutes.
  7. Fluff the rice with a fork before serving it topped with the baked salmon and garnish with fresh parsley.

Notes

You can prepare the rice ahead of time and reheat with a splash of broth. For a speedier version, use an air fryer for the salmon.
