Description

Ingredients

  • 1 (4-5 lb) beef tenderloin
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon Dijon mustard
  • 1 cup beef broth
  • 1 cup red wine

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Trim the beef tenderloin of excess fat and silver skin.
  3. In a small bowl, mix together olive oil, salt, pepper, garlic, rosemary, thyme, and Dijon mustard.
  4. Rub the mixture all over the beef tenderloin.
  5. Heat a large oven-safe skillet over medium-high heat and sear the tenderloin on all sides until browned.
  6. Pour in the beef broth and red wine, then transfer the skillet to the preheated oven.
  7. Roast for about 25-30 minutes or until the internal temperature reaches 135°F (57°C) for medium-rare.
  8. Remove from the oven and let rest for 10-15 minutes before slicing.

Notes

  • For a more intense flavor, marinate the beef overnight.
  • Serve with your favorite sides for a complete meal.
