Description

Mini Strawberry Cheesecakes are delightful bite-sized desserts that combine a creamy cheesecake filling with a fresh strawberry topping, perfect for any occasion.


Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1 cup fresh strawberries, sliced
  • 1/4 cup strawberry jam

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter until combined.
  3. Press the mixture into the bottom of mini cheesecake pans.
  4. In another bowl, beat cream cheese, 1/2 cup sugar, and vanilla extract until smooth.
  5. Add eggs one at a time, mixing well after each addition.
  6. Pour the cream cheese mixture over the crusts in the pans.
  7. Bake for 20-25 minutes or until set.
  8. Let cool, then refrigerate for at least 2 hours.
  9. Top with sliced strawberries and drizzle with strawberry jam before serving.

Notes

  • For a gluten-free version, use gluten-free graham crackers.
  • These can be made a day in advance for convenience.
  • Feel free to substitute strawberries with other berries if desired.
