Ingredients

- 1 head of cauliflower
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
- 1/4 cup tahini
- 2 tablespoons honey
- Juice of 1 lemon
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the cauliflower into bite-sized florets and place them on a baking sheet lined with parchment.
- Drizzle with olive oil, then sprinkle with cumin, coriander, paprika, cayenne, salt, and pepper. Toss to coat evenly.
- Roast in the oven for about 25-30 minutes, flipping halfway through.
- Whisk together tahini, honey, and lemon juice in a mixing bowl until smooth.
- Drizzle the tahini-honey mixture over the roasted cauliflower and toss gently.
- Garnish with fresh parsley before serving.
Notes
Can be made vegan by substituting honey with maple syrup. Perfect for pairing with couscous salad or grilled meats.
