Description

A vibrant and warming dish featuring roasted cauliflower with a delectable tahini-honey drizzle, infused with Moroccan spices.


Ingredients

Scale
  • 1 head of cauliflower
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 1/4 cup tahini
  • 2 tablespoons honey
  • Juice of 1 lemon
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the cauliflower into bite-sized florets and place them on a baking sheet lined with parchment.
  3. Drizzle with olive oil, then sprinkle with cumin, coriander, paprika, cayenne, salt, and pepper. Toss to coat evenly.
  4. Roast in the oven for about 25-30 minutes, flipping halfway through.
  5. Whisk together tahini, honey, and lemon juice in a mixing bowl until smooth.
  6. Drizzle the tahini-honey mixture over the roasted cauliflower and toss gently.
  7. Garnish with fresh parsley before serving.

Notes

Can be made vegan by substituting honey with maple syrup. Perfect for pairing with couscous salad or grilled meats.
