Description

A refreshing and easy-to-make no-bake lemon slice that combines the sweetness of condensed milk with the tropical flavor of coconut.


Ingredients

  • 1 cup crushed digestive biscuits
  • 1/2 cup sweetened shredded coconut
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 cup melted butter

Instructions

  1. In a mixing bowl, combine crushed digestive biscuits and shredded coconut.
  2. Add melted butter, sweetened condensed milk, lemon juice, and lemon zest to the bowl.
  3. Mix all ingredients until well combined.
  4. Press the mixture into a lined square baking dish evenly.
  5. Refrigerate for at least 2 hours or until set.
  6. Cut into squares and serve chilled.

Notes

  • For a stronger lemon flavor, add more lemon zest.
  • Store leftovers in an airtight container in the refrigerator.
  • Can be garnished with extra coconut or lemon slices before serving.
