- 1 cup crushed digestive biscuits
- 1/2 cup sweetened shredded coconut
- 1 can (14 oz) sweetened condensed milk
- 1/2 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/4 cup melted butter
Instructions
- In a mixing bowl, combine crushed digestive biscuits and shredded coconut.
- Add melted butter, sweetened condensed milk, lemon juice, and lemon zest to the bowl.
- Mix all ingredients until well combined.
- Press the mixture into a lined square baking dish evenly.
- Refrigerate for at least 2 hours or until set.
- Cut into squares and serve chilled.
Notes
- For a stronger lemon flavor, add more lemon zest.
- Store leftovers in an airtight container in the refrigerator.
- Can be garnished with extra coconut or lemon slices before serving.
