- 2 ripe bananas
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 cup Nutella
- 1/4 cup butter, melted
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners for easy cleaning and perfect muffins.
- Mash the ripe bananas until smooth.
- Pour the melted butter into the mashed bananas and mix well until combined.
- Add sugar, egg, and vanilla extract to the banana mixture. Whisk until smooth.
- Whisk together flour, baking soda, baking powder, and salt in another bowl.
- Gradually add the dry mixture to the banana mixture, stirring gently.
- Divide half of the batter into the muffin cups.
- Spoon Nutella into the center of each muffin.
- Top with the remaining batter, covering the Nutella.
- Swirl the Nutella into the batter slightly with a toothpick.
- Bake for 18-20 minutes, until a toothpick comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a cooling rack.
Notes
For a vegan option, substitute the egg with a flax egg. Store muffins in an airtight container for up to three days or freeze for up to three months.
