Ingredients

- 1 medium head of cabbage
- 1 cup cooked quinoa
- 1 cup grated carrots
- 1/2 cup chopped onions
- 2 cloves garlic, minced
- 1/2 cup breadcrumbs
- 1/4 cup chopped fresh parsley
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Remove the core from the cabbage and carefully separate the leaves.
- In a large bowl, combine cooked quinoa, grated carrots, chopped onions, minced garlic, breadcrumbs, parsley, salt, pepper, and paprika.
- Take a cabbage leaf and spoon some of the mixture onto the center.
- Fold the sides of the cabbage leaf over the filling and place seam-side down on a baking sheet.
- Repeat with remaining leaves and filling.
- Drizzle olive oil over the cabbage burgers.
- Bake in the preheated oven for 25-30 minutes, or until the cabbage is tender and slightly golden.
- Serve warm and enjoy!
