Golden, crisp phyllo pastry envelops creamy feta, fresh herbs, and zesty lemon, drizzled with chili honey for a delightful appetizer.

- 8 oz Feta Cheese
- 2 tbsp Dill
- 2 tbsp Mint
- 1 tbsp Lemon Zest
- 8 sheets Phyllo Pastry
- 4 tbsp Olive Oil
- 1/2 cup Honey
- 1 tbsp Chili Flakes
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Crush the feta cheese in a mixing bowl, adding dill, mint, and lemon zest; mix gently.
- Lay one sheet of phyllo pastry on a clean work surface, brushing lightly with olive oil.
- Place a second sheet on top and repeat the brushing. For extra layers, use up to four sheets.
- Cut the layered phyllo into strips about 4 inches wide. Place 2 tablespoons of the feta mixture at one end of each strip.
- Fold the edges over the filling to create an envelope, then roll tightly from one end to the other.
- Seal the ends and place each roll seam-side down on the prepared baking sheet; brush with more olive oil.
- Bake for 20-25 minutes until the rolls are puffed and golden brown.
- Combine honey and chili flakes in a saucepan over low heat until warmed through.
- Drizzle the chili honey over the warm feta rolls before serving.
Notes
Keep phyllo covered with a damp cloth to prevent drying out. Great served with tzatziki or hummus.
