Description

Delightful roasted sweet potato rounds topped with creamy feta and drizzled with honey, offering a perfect balance of sweet and savory.


Ingredients

  • 2 large sweet potatoes, washed and sliced into 1/4-inch thick rounds
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons honey
  • 1 tablespoon fresh thyme leaves, roughly chopped
  • Optional: a pinch of cayenne pepper for extra heat

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare your baking sheet by lining it with parchment paper.
  3. Arrange the sweet potato rounds in a single layer on the prepared baking sheet.
  4. Drizzle the olive oil over the sweet potatoes, ensuring each one gets coated.
  5. Season with salt and black pepper to your taste.
  6. Roast in the preheated oven for about 20-25 minutes, flipping halfway through.
  7. Remove from the oven when golden brown and tender; sprinkle crumbled feta over the hot sweet potatoes.
  8. Drizzle honey over the rounds and sprinkle with fresh thyme.

Notes

Make-ahead tips: Slice sweet potatoes ahead of time and store in water to prevent browning. An air fryer can also be used for a crunchier texture.
