Description

A delightful dish featuring roasted sweet potato rounds topped with creamy feta cheese and drizzled with honey, perfect as a side or appetizer.


Ingredients

  • 2 large sweet potatoes
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground cinnamon (optional)
  • 2 tablespoons honey
  • 1/3 cup crumbled feta cheese
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Peel the sweet potatoes and slice them into 1/2-inch thick rounds.
  3. Arrange the rounds on the lined baking sheet in a single layer.
  4. Drizzle with olive oil and season with salt, pepper, and cinnamon (if using). Toss gently to coat.
  5. Roast in the oven for 20-25 minutes, flipping halfway through.
  6. Transfer to a serving platter and drizzle with honey.
  7. Sprinkle crumbled feta cheese and parsley over the top.
  8. Serve immediately while warm.

Notes

For a crunchier finish, leave the sweet potatoes a little longer in the oven but watch closely to avoid burning.
