- 2 large sweet potatoes
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon ground cinnamon (optional)
- 2 tablespoons honey
- 1/3 cup crumbled feta cheese
- 1 tablespoon chopped fresh parsley
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Peel the sweet potatoes and slice them into 1/2-inch thick rounds.
- Arrange the rounds on the lined baking sheet in a single layer.
- Drizzle with olive oil and season with salt, pepper, and cinnamon (if using). Toss gently to coat.
- Roast in the oven for 20-25 minutes, flipping halfway through.
- Transfer to a serving platter and drizzle with honey.
- Sprinkle crumbled feta cheese and parsley over the top.
- Serve immediately while warm.
Notes
For a crunchier finish, leave the sweet potatoes a little longer in the oven but watch closely to avoid burning.
