- 1 cup dark rum
- 1 cup coconut rum
- 1 ½ cups all-purpose flour
- 10 oz sweetened coconut flakes
- 2 large eggs
- ½ cup coconut milk
- Vegetable oil for frying

- ½ cup powdered sugar
Instructions
- Soak the pineapple by placing the rings in a bowl, pouring dark and coconut rums over them, and letting them soak for at least one hour.
- Prepare the coating by setting up three shallow bowls with flour, a whisked egg and coconut milk mixture, and coconut flakes.
- Coat each pineapple ring in flour, then egg mixture, and finally in coconut flakes, ensuring even coverage.
- Heat vegetable oil in a deep pot to 350°F (175°C).
- Fry the coated pineapple rings for about 1 minute on each side or until golden brown.
- Make the dipping sauce by combining softened cream cheese and powdered sugar, then stirring in reserved rum to achieve a smooth consistency.
Notes
Soaking the pineapple overnight enhances flavor. For a lighter version, consider air-frying the pineapple rings.
