Description

Indulge in these crispy, golden-brown pineapple rings soaked in dark and coconut rum, served with a creamy dipping sauce for a tropical delight.


Ingredients

  • 8 pineapple rings
  • 1 cup dark rum
  • 1 cup coconut rum
  • 1 ½ cups all-purpose flour
  • 10 oz sweetened coconut flakes
  • 2 large eggs
  • ½ cup coconut milk
  • Vegetable oil for frying
  • 4 oz cream cheese, softened
  • ½ cup powdered sugar

Instructions

  1. Soak the pineapple by placing the rings in a bowl, pouring dark and coconut rums over them, and letting them soak for at least one hour.
  2. Prepare the coating by setting up three shallow bowls with flour, a whisked egg and coconut milk mixture, and coconut flakes.
  3. Coat each pineapple ring in flour, then egg mixture, and finally in coconut flakes, ensuring even coverage.
  4. Heat vegetable oil in a deep pot to 350°F (175°C).
  5. Fry the coated pineapple rings for about 1 minute on each side or until golden brown.
  6. Make the dipping sauce by combining softened cream cheese and powdered sugar, then stirring in reserved rum to achieve a smooth consistency.

Notes

Soaking the pineapple overnight enhances flavor. For a lighter version, consider air-frying the pineapple rings.
