- 2 boneless, skinless chicken thighs
- 4 cups low-sodium chicken broth
- 2 packs of ramen noodles
- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons soy sauce
- 1 tablespoon chili paste (adjust to taste)
- 1 cup heavy cream
- 2 green onions, sliced
- Salt and pepper to taste
Instructions
- Heat the oil in a large pot over medium heat. Add the minced garlic and ginger, sautéing until fragrant.
- Add the chicken thighs to the pot and caramelize until golden brown on both sides, about 5 minutes.
- Pour in the chicken broth, soy sauce, and chili paste. Bring to a boil.
- Reduce the heat and let it simmer for 15-20 minutes until the chicken is tender.
- Remove the chicken, shred it, and return it to the pot.
- Stir in the heavy cream and season with salt and pepper.
- In a separate pot, prepare ramen noodles according to package instructions.
- Assemble bowls by placing noodles at the bottom, ladling the broth and shredded chicken over the top.
- Garnish with sliced green onions and serve hot.
