A flavorful and nutritious Spicy Glazed Chicken Bowl served with creamy hummus, perfect for a quick meal.
Ingredients

- 2 chicken breasts
- 1 cup cooked brown rice
- 1/2 cup hummus
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon sriracha
- 1 tablespoon olive oil
- 1 cup mixed vegetables (bell peppers, broccoli, carrots)
- Salt and pepper to taste
Instructions
- In a bowl, mix soy sauce, honey, and sriracha to create the glaze.
- Marinate the chicken breasts in the glaze for at least 30 minutes.
- Heat olive oil in a pan over medium heat and cook the chicken until fully cooked, about 6-7 minutes per side.
- Remove the chicken from the pan and let it rest before slicing.
- In the same pan, stir-fry the mixed vegetables until tender.
- Assemble the bowl by placing brown rice at the bottom, topped with sliced chicken, vegetables, and a dollop of hummus.
- Drizzle any remaining glaze over the top and serve warm.
Notes
- Adjust the spiciness by adding more or less sriracha.
- Feel free to substitute chicken with tofu for a vegetarian option.
- This dish can be made ahead and stored in the refrigerator for up to 3 days.
