Description

A vibrant and refreshing salad inspired by spring rolls, topped with a creamy peanut dressing.


Ingredients

  • 1 cup shredded cabbage
  • 1 cup julienned carrots
  • 1 cup sliced bell peppers
  • 1 cup cucumber, sliced

  • 1/4 cup peanuts, crushed

Instructions

  1. Cook the rice noodles according to package instructions, then drain and rinse under cold water.
  2. In a large bowl, combine the shredded cabbage, carrots, bell peppers, cucumber, cilantro, and mint.
  3. Add the cooked rice noodles to the vegetable mixture and toss gently to combine.
  4. In a separate bowl, whisk together the peanut dressing ingredients until smooth.

  6. Top with crushed peanuts before serving.

Notes
