Description

A hearty Sweet Potato Burger Bowl featuring roasted sweet potatoes, seasoned ground beef, and fresh toppings, perfect for a comforting meal.


Ingredients

  • 1 lb lean ground beef
  • 4 small sweet potatoes
  • 1 tablespoon avocado oil
  • Shredded lettuce
  • Red onion
  • Diced tomatoes
  • Pickles
  • Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt
  • Pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and dice sweet potatoes into bite-sized pieces.
  3. In a large bowl, combine diced sweet potatoes with avocado oil, garlic powder, onion powder, salt, and pepper; toss to coat.
  4. Spread sweet potatoes on a lined baking sheet and bake for 30–40 minutes, stirring halfway through.
  5. While sweet potatoes bake, heat a skillet over medium heat and brown the ground beef for about 8 minutes; add Worcestershire sauce and seasonings, mixing well.
  6. Assemble your bowl: start with shredded lettuce, then add roasted sweet potatoes and cooked ground beef, garnishing with red onions, diced tomatoes, and pickles.
