- 1 cup uncooked white rice
- 2 cups water or chicken broth
- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 can black beans (15 oz), drained and rinsed
- 1 cup corn (frozen or canned)
- 1 cup diced tomatoes
- 1 cup shredded lettuce
- 1 cup shredded cheddar cheese
- ½ cup salsa
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Optional fresh cilantro and lime wedges for garnish
Instructions
- Cook the rice: In a medium saucepan, combine rice with water or broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
- Brown the meat: In a large skillet, heat olive oil over medium heat. Add ground beef or turkey, seasoning it with salt, pepper, and taco seasoning. Cook for 5–7 minutes until browned.
- Mix in beans and corn: Stir in black beans and corn. Cook for another 2–3 minutes until heated through.
- Assemble bowls: In serving bowls, layer rice, then top with the meat mixture, diced tomatoes, lettuce, and cheddar cheese.
- Finish with toppings: Drizzle with salsa and add fresh cilantro and lime wedges.
