Description

A vibrant and flavorful Taco Rice Bowl filled with fluffy rice, spiced meat, and fresh toppings, perfect for family gatherings or weeknight dinners.


Ingredients

  • 1 cup uncooked white rice
  • 2 cups water or chicken broth
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 can black beans (15 oz), drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • ½ cup salsa
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Optional fresh cilantro and lime wedges for garnish

Instructions

  1. Cook the rice: In a medium saucepan, combine rice with water or broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
  2. Brown the meat: In a large skillet, heat olive oil over medium heat. Add ground beef or turkey, seasoning it with salt, pepper, and taco seasoning. Cook for 5–7 minutes until browned.
  3. Mix in beans and corn: Stir in black beans and corn. Cook for another 2–3 minutes until heated through.
  4. Assemble bowls: In serving bowls, layer rice, then top with the meat mixture, diced tomatoes, lettuce, and cheddar cheese.
  5. Finish with toppings: Drizzle with salsa and add fresh cilantro and lime wedges.

Notes

For make-ahead tips, prepare the meat mixture a day in advance. Customize with toppings like avocado or jalapeños.
