- 2 cups cooked rice (white, brown, or cauliflower)
- 1 lb chicken breast, diced
- 1 cup broccoli florets
- 1 cup bell peppers, chopped
- 1/2 cup carrots, sliced
- 1/2 cup teriyaki sauce
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic, minced
- Salt and pepper to taste
- Green onions for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add diced chicken and cook until golden brown.
- Add minced garlic and sauté for an additional minute.
- Stir in the broccoli, bell peppers, and carrots. Cook for another 3-5 minutes until vegetables soften slightly.
- In a large bowl, mix cooked rice, chicken mixture, teriyaki sauce, and soy sauce until evenly coated.
- Transfer to a greased casserole dish and spread evenly.
- Bake for 20-25 minutes or until heated through and bubbly.
- Garnish with chopped green onions before serving.
Notes
You can prepare the casserole a day in advance. It also freezes well for up to 3 months.
