Description

A comforting dish featuring tender chicken coated in teriyaki sauce, vibrant vegetables, and seasoned rice, perfect for family dinners.


Ingredients

  • 2 cups cooked rice (white, brown, or cauliflower)
  • 1 lb chicken breast, diced
  • 1 cup broccoli florets
  • 1 cup bell peppers, chopped
  • 1/2 cup carrots, sliced
  • 1/2 cup teriyaki sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add diced chicken and cook until golden brown.
  3. Add minced garlic and sauté for an additional minute.
  4. Stir in the broccoli, bell peppers, and carrots. Cook for another 3-5 minutes until vegetables soften slightly.
  5. In a large bowl, mix cooked rice, chicken mixture, teriyaki sauce, and soy sauce until evenly coated.
  6. Transfer to a greased casserole dish and spread evenly.
  7. Bake for 20-25 minutes or until heated through and bubbly.
  8. Garnish with chopped green onions before serving.

Notes

You can prepare the casserole a day in advance. It also freezes well for up to 3 months.
