Ingredients

  • 1 tortilla (whole wheat or flour)
  • 1 grilled chicken breast or 1 block of tofu
  • 2 cups mixed greens (romaine, arugula)
  • 1/2 cup bell peppers, sliced
  • 1/2 cup cucumber, diced
  • 1/2 cup shredded carrots
  • 2 tablespoons creamy dressing (hummus, tzatziki, or avocado crema)

Instructions

  1. Prep the ingredients by washing and chopping your mixed greens and veggies into bite-sized pieces.
  2. Cook the protein: grill or sauté the chicken until cooked through, or pan-fry marinated tofu until crispy.
  3. Spread a generous layer of your chosen creamy dressing on the tortilla.
  4. Layer mixed greens, grilled chicken or tofu, and colorful veggies evenly on the tortilla.
  5. Roll the tortilla tightly, tucking in the sides as you go.
  6. Slice the wrap diagonally for an elegant presentation.
