Description

A refreshing and vibrant tortellini pasta salad that combines fresh vegetables and a zesty dressing for a delightful twist on a classic dish.


Ingredients

  • 12 oz cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup bell pepper, diced
  • 1/4 cup black olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Cook the tortellini according to package instructions. Drain and rinse under cold water.
  2. In a large bowl, combine the cooked tortellini, cherry tomatoes, cucumber, red onion, bell pepper, black olives, feta cheese, and basil.
  3. In a separate small bowl, whisk together the olive oil, red wine vinegar, garlic powder, salt, and pepper.
  4. Pour the dressing over the salad and toss gently to combine.
