  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach, packed
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup vegetable broth
  • 1/4 cup heavy cream
  • Salt and black pepper to taste

Instructions

  1. Heat the oil in a large skillet over medium heat.
  2. Sauté the onion for about 3-4 minutes until soft and translucent.
  3. Add the minced garlic and cook for an additional 1-2 minutes.
  4. Incorporate the chopped sun-dried tomatoes and sauté for 2 minutes.
  5. Season with dried thyme, dried basil, and red pepper flakes.
  6. Add the vegetable broth and scrape up caramelized bits from the skillet.
  7. Bring the mixture to a gentle simmer.
  8. Introduce the drained butter beans, folding them into the sauce.
  9. Let it simmer for 5-7 minutes.
  10. Add the fresh spinach in batches and stir until wilted.
  11. Stir in the heavy cream until smooth.
  12. Taste and season with salt and black pepper.
  13. Simmer for another 2-3 minutes before serving.
