Instructions
- Heat the oil in a large skillet over medium heat.
- Sauté the onion for about 3-4 minutes until soft and translucent.
- Add the minced garlic and cook for an additional 1-2 minutes.
- Incorporate the chopped sun-dried tomatoes and sauté for 2 minutes.

- Add the vegetable broth and scrape up caramelized bits from the skillet.
- Bring the mixture to a gentle simmer.
- Introduce the drained butter beans, folding them into the sauce.
- Let it simmer for 5-7 minutes.
- Add the fresh spinach in batches and stir until wilted.
- Stir in the heavy cream until smooth.
- Taste and season with salt and black pepper.
- Simmer for another 2-3 minutes before serving.
