Description

Indulge in the ultimate breakfast experience with crispy French fries, creamy cheese curds, perfectly poached eggs, and rich hollandaise sauce.

Ingredients

  • French Fries (classic, crinkle-cut, or sweet potato)
  • Cheese Curds
  • Poached Eggs
  • Hollandaise Sauce:
  • Egg Yolks
  • Lemon Juice
  • Unsalted Butter
  • Salt
  • Pepper
  • Chives (optional)

Instructions

  1. Prepare the French fries according to package instructions or slice and fry homemade potatoes until golden.
  2. Build your base by placing fries on a plate and sprinkling cheese curds on top.
  3. Poach the eggs by simmering water with vinegar and gently sliding eggs in until whites are set and yolks are runny (3-4 minutes).
  4. Whisk together egg yolks, lemon juice, and melted butter until fluffy, seasoning with salt and pepper.
  5. Assemble the dish by topping fries and cheese curds with poached eggs.
  6. Elevate with hollandaise sauce drizzled over everything, optionally garnishing with chives. Serve warm and enjoy!

Notes

Make hollandaise sauce in advance and reheat gently over a double boiler. Avoid overcrowding fries while frying to maintain crispness.
