Description

A rich and savory one-pan dish that brings the flavors of stuffed peppers without the fuss, featuring ground beef, bell peppers, and ooey-gooey cheese.


Ingredients

  • 2 tablespoons olive oil
  • 2 large bell peppers, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 (8 oz) can tomato sauce
  • 2 cups cooked rice
  • 1 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh parsley (optional for garnish)

Instructions

  1. In a large skillet, warm the olive oil over medium heat.
  2. Add the ground beef and cook until browned, breaking it apart with a spatula.
  3. Toss in diced bell peppers, chopped onion, and minced garlic. Sauté until softened.
  4. Season with salt, black pepper, and Italian seasoning.
  5. Add diced tomatoes and tomato sauce. Stir to combine and let simmer.
  6. Stir in cooked rice and allow to heat through.
  7. Sprinkle mozzarella cheese on top, cover until melted.
  8. Garnish with fresh parsley before serving.
