Instructions
- In a mixing bowl, combine instant coffee, sugar, and hot water.
- Whip the mixture until it becomes light and fluffy.
- In another bowl, whip the heavy cream and vanilla extract until soft peaks form.
- Gently fold the whipped coffee mixture into the whipped cream until well combined.
- Spread the whipped coffee ice cream between two cookies to form a sandwich.
- Freeze the sandwiches for at least 2 hours before serving.
