Description

A vibrant winter salad featuring juicy oranges, tart pomegranate seeds, creamy feta cheese, and crunchy candied pecans, all dressed in a light vinaigrette.


Ingredients

  • Spring greens (arugula, baby spinach, or a mix)
  • Juicy oranges (navel or blood oranges)
  • Vibrant pomegranate seeds
  • Crumbled feta cheese
  • Candied pecans
  • Olive oil
  • Vinegar (apple cider or balsamic)
  • Honey
  • Salt
  • Pepper

Instructions

  1. In a large bowl, combine spring greens, peeled and segmented oranges, pomegranate seeds, crumbled feta, and candied pecans. Squeeze orange segments to release juice.
  2. In a separate small bowl, whisk together olive oil, vinegar, honey, salt, and pepper. Adjust honey to taste.
  3. Drizzle the dressing over the salad and toss gently until coated.
  4. Serve immediately for best freshness.

Notes

Keep dressing separate until just before serving to maintain the crispness of the salad. Customize by adding thinly sliced red onion or grilled chicken.
