Description

A warm, creamy casserole featuring tender chicken, fluffy rice, and a golden cheesy crust, perfect for comforting meals.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups white rice
  • 4 cups chicken broth
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 packet onion soup mix
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the cream of mushroom soup, cream of chicken soup, onion soup mix, and chicken broth until combined.
  3. Grease a 9×13 inch casserole dish, then spread the uncooked rice evenly across the bottom.
  4. Place chicken breasts atop the rice and season with salt and pepper.
  5. Pour the soup mixture over the chicken and rice, covering everything.
  6. Cover the dish with aluminum foil and bake for 1 hour.
  7. Remove the foil and sprinkle shredded cheddar cheese on top, then return to the oven.
  8. Bake uncovered for an additional 15-20 minutes until the cheese is bubbly and golden.
  9. Garnish with chopped parsley before serving.

Notes

Make the casserole the night before and refrigerate. For a quicker option, use an air fryer. Customize with vegetables or different cheeses to suit your taste.
