- 4 boneless, skinless chicken breasts
- 2 cups white rice
- 4 cups chicken broth
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1 packet onion soup mix
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- Whisk together the cream of mushroom soup, cream of chicken soup, onion soup mix, and chicken broth until combined.
- Grease a 9×13 inch casserole dish, then spread the uncooked rice evenly across the bottom.
- Place chicken breasts atop the rice and season with salt and pepper.
- Pour the soup mixture over the chicken and rice, covering everything.
- Cover the dish with aluminum foil and bake for 1 hour.
- Remove the foil and sprinkle shredded cheddar cheese on top, then return to the oven.
- Bake uncovered for an additional 15-20 minutes until the cheese is bubbly and golden.
- Garnish with chopped parsley before serving.
Notes
Make the casserole the night before and refrigerate. For a quicker option, use an air fryer. Customize with vegetables or different cheeses to suit your taste.
