Description

A heartwarming dish of succulent pork medallions in a sweet apple cider reduction paired with creamy mashed sweet potatoes.

Ingredients

Scale
  • 1 lb pork medallions or chops
  • 1 cup apple cider
  • 3 cloves garlic, minced
  • 1 tbsp fresh thyme or rosemary
  • 2 tbsp butter
  • 2 large sweet potatoes, peeled and cubed
  • Salt and pepper, to taste

Instructions

  1. Melt the butter in a cast iron skillet or heavy-bottom pan over medium heat.
  2. Sauté the minced garlic until fragrant, about 1 minute.
  3. Brown the pork medallions, seasoning with salt and pepper, for approximately 3-4 minutes on each side.
  4. Add apple cider and herbs, then simmer until cooked through, about 10-15 minutes.
  5. Prepare the sweet potatoes by boiling them in salted water until tender, around 15-20 minutes.
  6. Mash the sweet potatoes with salt, pepper, and a bit of butter until creamy.
  7. Serve the mashed sweet potatoes topped with the apple cider pork and pan sauce.

Notes

Ensure pork is cooked to an internal temperature of 145°F and that sweet potatoes are fork-tender before mashing.
