A heartwarming dish of succulent pork medallions in a sweet apple cider reduction paired with creamy mashed sweet potatoes.

- 1 lb pork medallions or chops
- 1 cup apple cider
- 3 cloves garlic, minced
- 1 tbsp fresh thyme or rosemary
- 2 tbsp butter
- 2 large sweet potatoes, peeled and cubed
- Salt and pepper, to taste
Instructions
- Melt the butter in a cast iron skillet or heavy-bottom pan over medium heat.
- Sauté the minced garlic until fragrant, about 1 minute.
- Brown the pork medallions, seasoning with salt and pepper, for approximately 3-4 minutes on each side.
- Add apple cider and herbs, then simmer until cooked through, about 10-15 minutes.
- Prepare the sweet potatoes by boiling them in salted water until tender, around 15-20 minutes.
- Mash the sweet potatoes with salt, pepper, and a bit of butter until creamy.
- Serve the mashed sweet potatoes topped with the apple cider pork and pan sauce.
Notes
Ensure pork is cooked to an internal temperature of 145°F and that sweet potatoes are fork-tender before mashing.
