Description

A delightful and colorful breakfast featuring eggs baked with creamy feta, fresh spinach, and juicy cherry tomatoes.


Ingredients

Scale
  • 8 oz feta cheese
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper, diced
  • 2 cups fresh spinach
  • 4 large eggs
  • 2 tbsp olive oil
  • Salt to taste
  • Pepper to taste
  • Optional herbs (basil or dill)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare individual ramekins by layering feta cheese at the bottom.
  3. Add cherry tomatoes and red bell pepper over the feta, then layer with spinach.
  4. Crack an egg on top of each ramekin.
  5. Season with olive oil, salt, pepper, and herbs.
  6. Bake for 20-25 minutes until eggs reach desired doneness.
  7. Cool slightly before serving with crusty bread.

Notes

Make-ahead tips available for assembling in advance. Can also be made in an air fryer.
