- 8 oz feta cheese
- 1 cup cherry tomatoes, halved
- 1 red bell pepper, diced
- 2 cups fresh spinach
- 4 large eggs
- 2 tbsp olive oil
- Salt to taste
- Pepper to taste
- Optional herbs (basil or dill)
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare individual ramekins by layering feta cheese at the bottom.
- Add cherry tomatoes and red bell pepper over the feta, then layer with spinach.
- Crack an egg on top of each ramekin.
- Season with olive oil, salt, pepper, and herbs.
- Bake for 20-25 minutes until eggs reach desired doneness.
- Cool slightly before serving with crusty bread.
