Instructions
- Preheat the oven to 350°F (175°C). Grease and lightly flour a nine-by-thirteen-inch baking pan or line with parchment paper.
- Toast the chopped walnuts in a dry skillet over medium heat for 3-5 minutes until fragrant and golden brown.
- Mix the dry ingredients: In a medium bowl, whisk together flour, baking soda, baking powder, salt, and ground cinnamon.
- Combine wet ingredients: In a large bowl, whisk together vegetable oil, granulated sugar, and brown sugar until blended. Add eggs one at a time, mixing well after each. Stir in vanilla extract.
- Mash the bananas: In a separate bowl, mash bananas until smooth, then whisk with buttermilk and pour into wet mix.
- Combine wet and dry mixtures gently until no dry flour remains.
- Add the toasted walnuts and fold gently into the batter.
- Bake for 35-40 minutes, testing doneness with a skewer.
- Cool the cake in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Prepare the frosting by beating cream cheese and butter until smooth, adding powdered sugar, vanilla extract, and salt until fluffy.
- Frost the cooled cake generously with cream cheese frosting and garnish with additional toasted walnuts.
