Description

Delightful and fluffy muffins filled with mixed berries and creamy cream cheese, perfect for breakfast or as a snack.


Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup cream cheese, softened
  • 1 large egg
  • ½ cup milk
  • ½ cup unsalted butter, melted
  • 1 cup mixed berries (blueberries, raspberries, strawberries)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix the softened cream cheese, egg, milk, and melted butter until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Gently fold in the mixed berries.
  6. Divide the batter evenly among the muffin cups, filling each about ¾ full.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool for a few minutes in the pan before transferring to a wire rack.

Notes

You can use frozen berries instead of fresh. For a lighter option, substitute cream cheese with Greek yogurt.
