A vibrant dish bursting with fresh flavors and textures, this Crab Louie salad features tender crabmeat paired with crisp lettuce, creamy avocado, and a zesty Louie dressing.
Ingredients

- 1 1/2 lbs King Crab (or cocktail shrimp)
- 6 large eggs
- 10 cups chopped romaine lettuce (or butter lettuce)
- 1 large avocado
- 1 cup cherry tomatoes
- 6 medium cocktail cucumbers
- 10 small radishes (or 2 watermelon radishes)
- 1 small red onion
- 2 tbsp capers
- 1 large lemon
- 1 bundle asparagus spears (about 20 spears)
- Olive oil, sea salt, and pepper (to taste)
- 1 recipe Homemade Louie Salad Dressing
Instructions
- Prepare the dressing by whisking mayonnaise, ketchup, lemon juice, Worcestershire sauce, and seasonings until smooth.
- Place eggs in a saucepan, cover with cold water, boil, then cover and let sit for 10-12 minutes. Transfer to an ice bath, peel, and slice.
- Shell the crab or prepare the shrimp.
- Wash and dry the lettuce, chop into pieces, and prepare remaining veggies by slicing and dicing.
- Combine all prepared ingredients in a large mixing bowl.
- Drizzle the dressing over the salad and toss gently to coat.
- Serve fresh on plates, garnished as desired.
Notes
Make ahead by preparing veggies, eggs, and dressing a day in advance. Dress just before serving.
