Description

Grilled chicken marinated with a creamy, zesty mixture that enhances flavor and tenderness.


Ingredients

Scale
  • 2 1/2 to 3 lbs chicken meat (thighs, breasts, or drumsticks)
  • 1/2 cup mayonnaise
  • 1 1/2 tbsp Dijon mustard
  • 1/4 cup freshly squeezed lemon juice
  • 3 to 4 garlic cloves, minced
  • 2 tsp sea salt
  • Ground black pepper (to taste)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp coriander
  • 1 tsp smoked paprika
  • 2 to 3 tbsp fresh, chopped dill

Instructions

  1. Combine mayonnaise, Dijon mustard, lemon juice, minced garlic, sea salt, black pepper, garlic powder, onion powder, coriander, smoked paprika, and dill in a mixing bowl.
  2. Whisk the ingredients together until smooth.
  3. Place chicken in a sealable plastic bag or bowl, and pour marinade over it.
  4. Seal the bag or cover the bowl and refrigerate for at least 1 hour or overnight.
  5. Preheat the grill to medium-high heat before grilling.
  6. Remove chicken from marinade and place on the grill, discarding any leftover marinade.
  7. Grill each side for 6–8 minutes until the internal temperature reaches 165°F.
  8. Rest chicken for 5 minutes after grilling before serving.

Notes

Make ahead by marinating the chicken overnight for improved flavor.
