Description

Delicious Blueberry Lemon Pie Bars with a buttery crust and creamy filling bursting with vibrant blueberries and zesty lemon.


Ingredients

  • 1 cup (227g) unsalted butter, melted
  • ½ cup (100g) granulated sugar
  • 2 teaspoons vanilla extract
  • ½ teaspoon salt
  • Zest of one lemon
  • 2 cups (240g) all-purpose flour
  • 8 ounces (225g) cream cheese, softened to room temperature
  • 1 cup (200g) granulated sugar
  • Zest of one lemon
  • 2 large eggs
  • 5 ounces (150g) yogurt or sour cream
  • 2 teaspoons fresh lemon juice
  • ¼ teaspoon salt
  • ½ cup (60g) all-purpose flour
  • 3 cups (300g) blueberries (fresh or frozen)

Instructions

  1. Position a rack in the center of the oven and preheat to 350ºF (177ºC).
  2. Line an 8″ x 8″ (or 9″ x 9″) baking pan with foil, allowing some overhang.
  3. In a mixing bowl, combine melted butter, ½ cup of sugar, vanilla extract, salt, lemon zest, and flour.
  4. Mix until the dough resembles wet sand.
  5. Press this mixture into the bottom of the prepared pan.
  6. Bake the crust for 20 minutes or until light golden brown.
  7. In a separate bowl, whisk cream cheese with 1 cup of sugar until smooth.
  8. Add lemon zest, eggs, yogurt, fresh lemon juice, and salt, blending until creamy.
  9. Fold in the blueberries gently.
  10. Pour the filling over the slightly cooled crust.
  11. Return the pan to the oven and bake for another 35-40 minutes until set.
  12. Cool in the pan for about an hour, then refrigerate for at least two hours before slicing.

Notes

For best results, use room temperature ingredients and avoid overmixing.
