- 1 cup (227g) unsalted butter, melted
- ½ cup (100g) granulated sugar
- 2 teaspoons vanilla extract
- ½ teaspoon salt
- Zest of one lemon
- 2 cups (240g) all-purpose flour
- 8 ounces (225g) cream cheese, softened to room temperature
- 1 cup (200g) granulated sugar
- Zest of one lemon
- 2 large eggs
- 5 ounces (150g) yogurt or sour cream
- 2 teaspoons fresh lemon juice
- ¼ teaspoon salt
- ½ cup (60g) all-purpose flour
- 3 cups (300g) blueberries (fresh or frozen)
Instructions
- Position a rack in the center of the oven and preheat to 350ºF (177ºC).
- Line an 8″ x 8″ (or 9″ x 9″) baking pan with foil, allowing some overhang.
- In a mixing bowl, combine melted butter, ½ cup of sugar, vanilla extract, salt, lemon zest, and flour.
- Mix until the dough resembles wet sand.
- Press this mixture into the bottom of the prepared pan.
- Bake the crust for 20 minutes or until light golden brown.
- In a separate bowl, whisk cream cheese with 1 cup of sugar until smooth.
- Add lemon zest, eggs, yogurt, fresh lemon juice, and salt, blending until creamy.
- Fold in the blueberries gently.
- Pour the filling over the slightly cooled crust.
- Return the pan to the oven and bake for another 35-40 minutes until set.
- Cool in the pan for about an hour, then refrigerate for at least two hours before slicing.
Notes
For best results, use room temperature ingredients and avoid overmixing.
