- ½ cup butterscotch chips
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 2 large eggs

Instructions
- Preheat your oven to 325°F (160°C).
- Combine graham cracker crumbs, melted butter, and butterscotch chips in a large bowl.
- Press this mixture into the bottom of a greased 9×13-inch baking dish to form a firm crust.
- Beat softened cream cheese and sugar until completely smooth.
- Add the eggs one at a time, mixing thoroughly after each.
- Stir in vanilla extract and sour cream until fully incorporated.
- Pour the cheesecake mixture over the crust in your prepared baking dish.
- Bake for 40-45 minutes or until the center looks set but still has a slight jiggle.
- Let it cool at room temperature, then refrigerate for at least 4 hours.
