Description

Decadent butterscotch cheesecake bars with a buttery graham cracker crust, perfect for any occasion.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup butterscotch chips
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Combine graham cracker crumbs, melted butter, and butterscotch chips in a large bowl.
  3. Press this mixture into the bottom of a greased 9×13-inch baking dish to form a firm crust.
  4. Beat softened cream cheese and sugar until completely smooth.
  5. Add the eggs one at a time, mixing thoroughly after each.
  6. Stir in vanilla extract and sour cream until fully incorporated.
  7. Pour the cheesecake mixture over the crust in your prepared baking dish.
  8. Bake for 40-45 minutes or until the center looks set but still has a slight jiggle.
  9. Let it cool at room temperature, then refrigerate for at least 4 hours.
