Instructions
- Preheat your oven to 350°F (175°C) and generously grease a 9×13 inch baking pan.
- Combine the grated carrots, granulated sugar, brown sugar, and vegetable oil in a large bowl.
- Mix in the eggs one at a time, ensuring each is fully incorporated.
- Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt in another bowl.
- Gradually incorporate the dry mixture into the wet ingredients, mixing gently until just combined.
- Beat the cream cheese in a separate bowl until smooth, then mix in the powdered sugar and vanilla.
- Pour half of the carrot cake batter into the prepared pan.
- Add half of the cheesecake batter and gently spread with a spatula.
- Repeat with the remaining batters, swirling them together gently with a knife.
- Bake for 30–35 minutes or until a toothpick inserted comes out clean.
- Cool thoroughly in the pan before slicing into squares.
