Description

Delicious Carrot Cake Cheesecake Bars combine the comforting flavors of carrot cake with a rich cheesecake layer, creating a perfect dessert for any occasion.


Ingredients

  • 2 cups grated carrots
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 16 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and generously grease a 9×13 inch baking pan.
  2. Combine the grated carrots, granulated sugar, brown sugar, and vegetable oil in a large bowl.
  3. Mix in the eggs one at a time, ensuring each is fully incorporated.
  4. Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt in another bowl.
  5. Gradually incorporate the dry mixture into the wet ingredients, mixing gently until just combined.
  6. Beat the cream cheese in a separate bowl until smooth, then mix in the powdered sugar and vanilla.
  7. Pour half of the carrot cake batter into the prepared pan.
  8. Add half of the cheesecake batter and gently spread with a spatula.
  9. Repeat with the remaining batters, swirling them together gently with a knife.
  10. Bake for 30–35 minutes or until a toothpick inserted comes out clean.
  11. Cool thoroughly in the pan before slicing into squares.

Notes

Chill the bars for a refreshing treat. Add nuts or raisins for extra flavor, and avoid overmixing to maintain a light texture.
