Description

A comforting casserole combining the flavors of pizza with the wholesome crunch of zucchini, perfect for family dinners or gatherings.


Ingredients

  • 2 medium zucchinis, sliced
  • 1 cup mozzarella cheese, shredded
  • 1 cup marinara or tomato sauce
  • 1/2 cup Parmesan cheese, grated
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for greasing
  • Optional toppings: Pepperoni, olives, or sautéed mushrooms

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease your baking dish with olive oil.
  3. Layer the sliced zucchini in the baking dish.
  4. Pour marinara sauce over the zucchini, adding Italian seasoning, salt, and pepper.
  5. Spread mozzarella cheese evenly over the sauce.
  6. Sprinkle grated Parmesan cheese on top.
  7. Bake for 25-30 minutes until the cheese is golden brown.
  8. Let it cool slightly before serving.

Notes

For extra crunch, broil the casserole for a few minutes at the end of cooking. Assemble the casserole the night before to save time.
