Description

A vibrant salad featuring fluffy quinoa, tart cherries, crunchy pistachios, and fragrant mint, perfect for warm weather gatherings.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup fresh cherries, halved
  • 1/2 cup pistachios, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup apple cider vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water for a couple of minutes to wash away its bitter coating.
  2. Cook the quinoa in a medium-sized saucepan with 2 cups of water. Bring to a boil, then reduce heat and let it simmer for about 15 minutes until water is absorbed. Fluff with a fork and set aside to cool.
  3. Mix the cooled quinoa, halved cherries, chopped pistachios, and fresh mint in a large mixing bowl.
  4. Make the dressing by whisking together apple cider vinegar, olive oil, salt, and pepper in a small bowl.
  5. Dress the salad by pouring the dressing over the quinoa mixture and tossing gently to coat.
  6. Serve chilled or at room temperature.

Notes

Prepare quinoa and cherries a day in advance for optimal freshness. You can customize with feta cheese or cucumber.
