Ingredients

- 1 cup quinoa
- 2 cups water
- 1 cup fresh cherries, halved
- 1/2 cup pistachios, chopped
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup apple cider vinegar
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water for a couple of minutes to wash away its bitter coating.
- Cook the quinoa in a medium-sized saucepan with 2 cups of water. Bring to a boil, then reduce heat and let it simmer for about 15 minutes until water is absorbed. Fluff with a fork and set aside to cool.
- Mix the cooled quinoa, halved cherries, chopped pistachios, and fresh mint in a large mixing bowl.
- Make the dressing by whisking together apple cider vinegar, olive oil, salt, and pepper in a small bowl.
- Dress the salad by pouring the dressing over the quinoa mixture and tossing gently to coat.
- Serve chilled or at room temperature.

Prepare quinoa and cherries a day in advance for optimal freshness. You can customize with feta cheese or cucumber.
