A warm, melty chicken pesto sandwich featuring succulent chicken, vibrant pesto, and creamy mozzarella on toasted ciabatta.
Ingredients

- 2 boneless, skinless chicken breasts
- 1/4 cup pesto
- 4 slices fresh mozzarella cheese
- 4 slices of ciabatta or your choice of bread
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil leaves (optional)
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- Heat olive oil in a skillet over medium heat until shimmering.
- Cook the chicken for 6-7 minutes on each side until golden brown and cooked through.
- Rest the chicken for at least 5 minutes before slicing.
- Toast ciabatta slices in the same skillet until golden brown.
- Spread pesto on one side of each toasted slice.
- Layer the sliced chicken and mozzarella on the pesto side.
- Add fresh basil if desired, then close the sandwich.
- Serve warm and enjoy!
Notes
This sandwich can be assembled with rotisserie chicken for convenience. Feel free to customize with additional toppings.
