Description

A warm, melty chicken pesto sandwich featuring succulent chicken, vibrant pesto, and creamy mozzarella on toasted ciabatta.


Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 1/4 cup pesto
  • 4 slices fresh mozzarella cheese
  • 4 slices of ciabatta or your choice of bread
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil leaves (optional)

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a skillet over medium heat until shimmering.
  3. Cook the chicken for 6-7 minutes on each side until golden brown and cooked through.
  4. Rest the chicken for at least 5 minutes before slicing.
  5. Toast ciabatta slices in the same skillet until golden brown.
  6. Spread pesto on one side of each toasted slice.
  7. Layer the sliced chicken and mozzarella on the pesto side.
  8. Add fresh basil if desired, then close the sandwich.
  9. Serve warm and enjoy!

Notes

This sandwich can be assembled with rotisserie chicken for convenience. Feel free to customize with additional toppings.
