Description

Aromatic chicken shawarma marinated with warm spices and served with a creamy garlic sauce in pita bread, garnished with fresh vegetables.


Ingredients

  • 2 lbs chicken thighs, boneless and skinless
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • 3 tbsp olive oil
  • 1/4 cup plain yogurt
  • 1/4 cup tahini
  • Juice of 1 lemon
  • Pita bread, for serving
  • Chopped lettuce, tomatoes, and cucumbers for garnish

Instructions

  1. Combine minced garlic, cumin, coriander, paprika, turmeric, cayenne, salt, pepper, and olive oil in a large bowl to create a marinade.
  2. Add the chicken thighs, ensuring they are fully coated. Cover and refrigerate for at least 1 hour or overnight.
  3. Preheat your grill or skillet over medium-high heat. Cook the chicken for about 6-7 minutes on each side until internal temperature reaches 165°F.
  4. Remove the chicken from heat and let it rest for a few minutes.
  5. Prepare the garlic sauce by mixing yogurt, tahini, lemon juice, and minced garlic. Season with salt to taste.
  6. Slice the cooked chicken thinly and serve in warm pita, drizzled with garlic sauce and topped with lettuce, tomatoes, and cucumbers.

Notes

Marinate chicken overnight for deeper flavor. Avoid overcrowding the pan/grill to ensure a good sear.
