Description

These Cinnamon Apple Cottage Cheese Bites are a delightful, nutritious snack that combines the flavors of cinnamon and apple in a soft, chewy texture. Perfect for breakfast or as an afternoon treat.


Ingredients

  • 1 cup cottage cheese
  • 1 cup rolled oats
  • 1/2 cup applesauce or 1 small grated apple
  • 1 large egg
  • 1/2 tsp cinnamon
  • 1 tbsp honey or maple syrup (optional)
  • 1/2 tsp baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a mini muffin pan or line it with mini muffin liners.
  2. Combine the cottage cheese, oats, applesauce (or grated apple), egg, cinnamon, honey or maple syrup (if using), baking powder, and salt in a mixing bowl. Mix until well incorporated.
  3. Allow the mixture to rest for 5 minutes.
  4. Scoop the mixture evenly into the mini muffin pan.
  5. Bake for 18–20 minutes, or until set and lightly golden.
  6. Let the bites cool before transferring them to a wire rack.
  7. Enjoy warm or cool; they store well in the fridge for up to four days.

Notes

Try adding chopped nuts or dried fruits for extra flavor. They can also be made gluten-free with certified gluten-free oats.
