- 1 cup cottage cheese
- 1 cup rolled oats
- 1/2 cup applesauce or 1 small grated apple
- 1 large egg
- 1/2 tsp cinnamon
- 1 tbsp honey or maple syrup (optional)
- 1/2 tsp baking powder
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C). Grease a mini muffin pan or line it with mini muffin liners.
- Combine the cottage cheese, oats, applesauce (or grated apple), egg, cinnamon, honey or maple syrup (if using), baking powder, and salt in a mixing bowl. Mix until well incorporated.
- Allow the mixture to rest for 5 minutes.
- Scoop the mixture evenly into the mini muffin pan.
- Bake for 18–20 minutes, or until set and lightly golden.
- Let the bites cool before transferring them to a wire rack.
- Enjoy warm or cool; they store well in the fridge for up to four days.
Notes
Try adding chopped nuts or dried fruits for extra flavor. They can also be made gluten-free with certified gluten-free oats.
