- 1/2 teaspoon vanilla extract

Instructions
- Preheat your oven to 350°F (175°C) and line your muffin tin with paper liners.
- Combine oat flour, protein powder, coconut sugar, baking powder, cinnamon, and salt in a large mixing bowl.
- Whisk together applesauce, eggs, almond milk, and vanilla extract in another bowl until smooth.
- Pour the wet mixture into the dry ingredients, gently stirring until just combined.
- Divide the batter evenly among the muffin cups, filling each about three-quarters full.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Cool slightly in the tin before transferring to a wire rack.
- Drizzle with cream cheese glaze if desired.
