Description

Delicious and nutritious muffins that combine the classic taste of cinnamon rolls with added protein, perfect for breakfast or a snack.


Ingredients

  • 1 cup oat flour
  • 1/2 cup protein powder
  • 1/4 cup coconut sugar
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup unsweetened applesauce
  • 2 large eggs
  • 1/2 cup almond milk
  • 1/2 teaspoon vanilla extract
  • Optional: Cream cheese for glazing

Instructions

  1. Preheat your oven to 350°F (175°C) and line your muffin tin with paper liners.
  2. Combine oat flour, protein powder, coconut sugar, baking powder, cinnamon, and salt in a large mixing bowl.
  3. Whisk together applesauce, eggs, almond milk, and vanilla extract in another bowl until smooth.
  4. Pour the wet mixture into the dry ingredients, gently stirring until just combined.
  5. Divide the batter evenly among the muffin cups, filling each about three-quarters full.
  6. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool slightly in the tin before transferring to a wire rack.
  8. Drizzle with cream cheese glaze if desired.

Notes

Store muffins in an airtight container for up to a week or freeze for up to three months. Reheat in the microwave for 10-15 seconds or in a 350°F oven for 5-7 minutes.
