Description

A vibrant and refreshing pasta salad featuring fresh lime, coriander, and colorful vegetables, perfect for summer gatherings.


Ingredients

  • 8 oz Fusilli or Penne Pasta
  • 1/4 cup Fresh Lime Juice
  • 1/4 cup Fresh Coriander (Cilantro), chopped
  • 1/4 cup Extra Virgin Olive Oil
  • Salt and Black Pepper, to taste
  • 1 cup Cherry Tomatoes, halved
  • 1 cup Cucumbers, diced
  • 1 cup Bell Peppers, chopped
  • Optional Protein: Grilled Chicken, Shrimp, or Chickpeas

Instructions

  1. Cook the pasta: In a large pot, boil water seasoned with salt. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water.
  2. Prepare the dressing: In a large mixing bowl, whisk together the cooled pasta, fresh lime juice, olive oil, salt, and black pepper.
  3. Combine the ingredients: Add the chopped coriander, cherry tomatoes, cucumbers, and bell peppers to the bowl.
  4. Include the protein: Gently fold in your choice of grilled chicken, shrimp, or chickpeas.
  5. Toss and chill: Toss everything together until coated and chill in the refrigerator for at least 30 minutes.
  6. Serve and enjoy: Spoon onto plates and enjoy as a side dish or light lunch.

Notes
