Description

Delicious muffins bursting with the flavors of fresh cranberries and zesty orange, perfect for breakfast or a snack.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup fresh cranberries, chopped
  • 1/2 cup granulated sugar
  • 1/2 cup orange juice
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 tablespoon orange zest
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. Combine the flour, sugar, baking powder, and salt in a large bowl.
  3. Whisk together the orange juice, vegetable oil, egg, and orange zest in another bowl.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Fold in the chopped cranberries gently.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  8. Allow the muffins to cool in the pan for 5 minutes before transferring to a cooling rack.
