Instructions
- Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
- Combine the flour, sugar, baking powder, and salt in a large bowl.
- Whisk together the orange juice, vegetable oil, egg, and orange zest in another bowl.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined.
- Fold in the chopped cranberries gently.
- Divide the batter evenly among the muffin cups.
- Bake for 20-25 minutes or until a toothpick inserted comes out clean.
- Allow the muffins to cool in the pan for 5 minutes before transferring to a cooling rack.
