- 8 oz tortellini (fresh or frozen)
- 4 oz bacon, diced
- 1 cup freshly grated Parmesan cheese
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 tsp freshly cracked black pepper
- Chopped parsley (for garnish)
Instructions
- Cook the tortellini in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside, reserving some pasta water.
- Prepare the bacon by cooking it in a large skillet over medium heat until crispy. Remove excess fat for a lighter version.
- Sauté the minced garlic in the skillet with the bacon for about a minute until fragrant.
- Add the heavy cream to the skillet and let it simmer gently until the sauce thickens.
- Incorporate the grated Parmesan cheese gradually, stirring until melted and creamy.
- Mix in the cooked tortellini, tossing until well-coated. Add reserved pasta water if the sauce is too thick.
- Season with black pepper and garnish with chopped parsley. Serve hot.
Notes
Make the sauce in advance and store in the fridge for up to two days. Add vegetables like spinach for a nutritious boost.
