Description

A cozy and comforting casserole featuring creamy cheese sauce and tender winter vegetables, perfect for chilly evenings.


Ingredients

Scale
  • 1 head of cauliflower, cut into florets
  • 1 head of broccoli, cut into florets
  • 2 carrots, sliced
  • 2 cups sharp cheddar cheese, grated
  • 2 cups whole milk
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • Salt and pepper, to taste
  • 1 cup bread crumbs (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Lightly steam the cauliflower, broccoli, and carrots until just tender, around 4-5 minutes.
  3. In a saucepan, melt butter over medium heat. Stir in flour to create a roux, cooking for about a minute.
  4. Gradually whisk in the milk, stirring constantly for about 4-5 minutes until it thickens.
  5. Add grated cheese to the sauce and stir until melted.
  6. In a mixing bowl, combine the steamed vegetables with the cheese sauce.
  7. Transfer to a baking dish and add bread crumbs on top if desired.
  8. Bake for 25-30 minutes until the top is golden brown.
  9. Allow to cool slightly before serving.

Notes

Customize by adding other vegetables or proteins like cooked chicken. Can be made ahead and baked later.
