Ingredients

- 1 head of cauliflower, cut into florets
- 1 head of broccoli, cut into florets
- 2 carrots, sliced
- 2 cups sharp cheddar cheese, grated
- 2 cups whole milk
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- Salt and pepper, to taste
- 1 cup bread crumbs (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Lightly steam the cauliflower, broccoli, and carrots until just tender, around 4-5 minutes.
- In a saucepan, melt butter over medium heat. Stir in flour to create a roux, cooking for about a minute.
- Gradually whisk in the milk, stirring constantly for about 4-5 minutes until it thickens.
- Add grated cheese to the sauce and stir until melted.
- In a mixing bowl, combine the steamed vegetables with the cheese sauce.
- Transfer to a baking dish and add bread crumbs on top if desired.
- Bake for 25-30 minutes until the top is golden brown.
- Allow to cool slightly before serving.
Notes
Customize by adding other vegetables or proteins like cooked chicken. Can be made ahead and baked later.
