- 6 hard-boiled eggs, chopped
- ½ cup shredded mozzarella cheese
- 2 tablespoons mayonnaise
- ½ tablespoon sriracha
- 2 teaspoons chives, chopped
- Kosher salt, to taste
- Black pepper, to taste
Instructions
- Chop the hard-boiled eggs into small pieces.
- Combine the chopped eggs with mozzarella cheese and chives in a mixing bowl.
- Stir in the mayonnaise and sriracha gently.
- Season with kosher salt and cracked pepper to taste. Set aside.
- Heat a non-stick frying pan over medium heat.
- Scoop a generous portion of the mixture and form it into a small patty.
- Place it on the frying pan and repeat with the remaining mixture.
- Cook for 3-4 minutes on each side until golden and crispy.
- Transfer the crispy patties to a paper towel-lined plate.
- Serve on a fresh bed of greens or inside a toasted sandwich.

Ensure eggs are perfectly boiled to avoid a chalky texture. Preheat the pan to achieve a crispy exterior.
